I am absolutely thrilled to join Cucina Caldesi in Marylebone this summer.
In this hands-on and exclusive cookery class, you will learn about the science and benefits of sourdough bread. You’ll create a sourdough starter and explore the ingredients, mixing and kneading techniques, first and second rises, and the shaping and scoring.
I will bring a loaf ready to score and bake, which will be enjoyed at lunch, and then we’ll start the process again. The first part of the class will be theoretical, exploring flours, their properties, how to choose the right one for the right bake, and then we’ll move onto the practical, so that you’ll see the steps more than once. There will be a light lunch, and the class will end with everyone bringing home a loaf ready to score and bake later that evening or the next day.
