Incredibly easy recipe great to accompany oily or grilled fish but also whipped feta.

The horseradish combined with the cream it's extraordinary! Make it spicier adding a little more if you prefer.
Beetroot is one of those underrated vegetables, often just roasted or eaten as it comes from the packet, but with just adding few more ingredients, makes it an incredible side dish.
Beetroot relish
Ingredients
250 g cooked beetroot
20 g crème fraiche
1 heaped tsp of horseradish sauce
2 tbsp lemon juice
Salt and pepper - optional
Method:
Chop the beetroot in small cubes and set in a bowl with the crème fraiche.
Mix until becomes of a gorgeous colour.
Add the horseradish sauce and combine.
Adjust the seasoning if necessary and the relish is ready. Keep refrigerated and use within 3 days.
