My First Wedding Cake with Italy in mind

I’m still buzzing with excitement from yesterday, as I officially completed a huge milestone: my first-ever wedding cake! It was an absolute honour to create something truly special for the wonderful couple, Ryan and Jason, whose wedding took place at the stunning Rockingham Castle.

Ryan and Jason first approached me last year with their vision, and from that moment, I knew this project would be a labour of love. While a classic millefoglie was their initial thought, I wanted to create something a little different, something that truly spoke to my Italian heritage and passion for baking. We settled on the exquisite Diplomatica. This beautiful cake is a delightful contrast of textures: a mix of light, buttery puff pastry layers alongside a delicate layer of traditional pan di Spagna (Italian sponge cake), all generously soaked in fragrant limoncello syrup. Each portion was then filled with light mascarpone chantilly cream and adorned with vibrant mixed red berries, creating a stunning and delicious individual dessert.

The preparation for this wedding was extensive, involving approximately 40 hours of labour. I meticulously prepared 62 individual portions of the Diplomatica, ensuring each guest would enjoy a perfect slice of this exquisite creation. This involved using around 4.5kg of mixed red berries, 5.5kg of sponges and puff pastry, and 5kg of mascarpone chantilly cream, not to mention countless delicate floral petals for decoration. In a really unique touch, I also crafted a smaller cake specifically for the grooms to decorate live during the reception – a wonderful way to involve them in the sweet traditions of their day!

Bringing this vision to life was an incredible undertaking. From sourcing the freshest berries to perfecting the balance of the limoncello syrup and mastering the delicate mascarpone cream, every step was a joy. Delivering the cakes to the breathtaking Rockingham Castle and seeing everything come together was truly magical.

Watching Ryan and Jason celebrate their love with their family and friends, knowing my cake was a part of their cherished memories, was incredibly rewarding. It was an absolute dream come true to be a part of their big day. Here’s to many more sweet celebrations!
